26-oz. organic whole-wheat Pastry flour (Heirloom Purple Straw) - $7.00 

Use the all purpose flour for nearly any baked good recipe! Note that it may not be suitable for some yeasted bread recipes due to the protein content of 10.8%.

Whole Wheat Turkey Red flour is also suitable for most baked goods and includes the nutritious bran of the wheat berry. Some recipes may benefit from mixing half whole wheat with half all-purpose flours.

The Whole Wheat Purple Straw Pastry flour is perfect for pastries, cookies, biscuits, and pancakes. Its lower gluten content keeps pastries tender. Purple Straw wheat nearly went extinct a few decades ago until a team of researchers revived it. Now, a small number of growers keep this heirloom wheat alive. It has been grown since colonial American times...and while yielding less than modern hybrids, it remains highly nutritious and sought-after for baked goods.
