🥗 Sautéed Hakurei Turnips with Greens and Garlic

🌱 Ingredients

  • 1 bunch Hakurei turnips, with greens
  • 1–2 tablespoons olive oil or butter
  • 2 cloves garlic, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • Optional: a squeeze of lemon juice or a splash of rice vinegar
  • Optional: red pepper flakes for heat

 

🔪 Instructions

  1. Prep the turnips:
    Trim the greens from the turnips and set aside. Rinse both thoroughly. Cut the turnips into halves or quarters, depending on size. Roughly chop the greens.
  2. Sauté the turnips:
    In a large skillet, heat the olive oil over medium heat. Add the turnips cut-side down and cook undisturbed for 3–4 minutes or until golden brown.
  3. Add garlic & greens:
    Flip the turnips and toss in the garlic. Sauté for 30 seconds, then add the greens. Cook for another 2–3 minutes, stirring occasionally, until the greens are wilted and the turnips are fork-tender.
  4. Season & finish:
    Season with salt, pepper, and optional lemon juice or vinegar for brightness. Serve warm as a side dish or over grains for a light meal.

 

🔄 Variations

  • Add a splash of soy sauce and sesame oil for an Asian twist.
  • Toss with cooked farro or quinoa for a grain bowl.
  • Top with a poached egg for brunch.
